  • Yalta bow - 1 pc (large);
  • bulgarian red pepper - 1 pc;
  • walnuts - 1/2 cup;
  • garlic - 1 clove;
  • cilantro - 1 bunch;
  • suneli hops - 1/2 tsp;
  • olive oil - 2-3 tablespoons;
  • wine vinegar - 1 tsp;
  • lemon juice - 1 tbsp.

To prepare Tbilisi salad with beans in its more “feminine” interpretation, we replace the traditionally used beef with tongue or chicken, which, along with other products, must be prepared for further mixing.

Meat

There are several ways to cook meat in this case. Chicken can be either smoked or boiled or even fried in a pan. Each of these methods takes place, here it is worth being guided only by individual preferences. We divide the smoked ham into fibers, in other cases, the meat is prepared independently. We wash the chicken breast, get rid of excess fat and veins and cut into small cubes. When frying in a pan, add a little vegetable oil and cook until golden brown.

If the option with roasting seemed to you the most attractive, you should try to reduce its fat content and calorie content as much as possible. To do this, the fried pieces can be placed on a paper towel and patted second on top, this procedure will help get rid of the remaining oil.

It is better to cook beef tongue, so the taste of the product in combination with the rest of the ingredients of the salad will be more harmonious. We wash it or the chicken, cut it into small cubes and cook in salted water until cooked, you can use a bay leaf. The chicken is chilled without removing it from the broth, so it will be juicier.

Beans and onions

Beans should be sorted out, discarding damaged beans. Then it needs to be poured into a spacious pan and pour water. Gradually, the beans will absorb water and swell. Therefore, there should be a lot of liquid. Average 100 g of dry beans need 2 cups of cold water.


After the beans swell, drain the water. Then add fresh beans to the pot with beans. drinking water and put on fire. After boiling, the heat should be reduced to a minimum. After 30 minutes, pour 100 ml of cold water into the pan. This will significantly reduce the cooking time. Half an hour after boiling again, add salt to taste. After another 15 minutes, the beans will be ready. We recline in a colander to glass the liquid.

Simultaneously with the beans, you can boil the meat. This will take 45-60 minutes. When the beef has cooled, it must be cut into small cubes.


Wash red pepper and cut into large slices. White partitions and the stalk with seeds must be separated.


The remaining pulp must be cut into strips.


Chop red onions into half rings or quarters. If the onion is very sharp, then it is better to scald it with boiling water. Otherwise, the taste will drown out everything else in the salad. Sweet Yalta is ideal, but as we already know, this variety is a little problematic - it rarely lasts until spring.


Rinse fresh cilantro with cold water, dry and finely chop.


Walnuts should be heated in a dry frying pan for 2-3 minutes to better reveal their taste and aroma. Then the kernels must be crushed.


Combine all prepared ingredients in one bowl. Add salt and pepper to taste.


Mix everything and season with vegetable oil. Leave to infuse for 30 minutes.

  1. Boil the meat, cool. Can be fried in a pan with a minimum of oil. We cut into cubes.
  2. Roast the nuts in a frying pan until the skin begins to peel off. Cool, grind.
